Ribs are a backyard grilling staple. Trying to find your go-to recipe or want to explore a new method! Give this Ribs recipe a try!

  1. Preheat your Char-Griller BBQ to 350°F with Char-Griller Premium lump charcoal. Make sure the charcoal is loaded to one side to create an indirect cooking area.
  2. Prepare ribs by trimming any loose or untidy looking edges of meat. Then remove membrane from the back (bone side) of the ribs.
  3. Rub the ribs with a generous amount of your favourite rub and let sit for 30-60 minutes. This allows the rub to sweat.
  4. Place the ribs bone side down on the barbeque in the indirect heat zone.
  5. Cook indirect for 1.5-2 hours, spritzing with water if the top of the ribs appears dry.
  6. At this time, wrap the ribs in tinfoil tightly with the butter, brown sugar and honey. Place back into the barbeque making sure the bone side is still down.
  7. In a further 1-1.5 hours your ribs should be cooked. If you have a probe, this will be reading 195-200°f. Check for tenderness.
  8. Remove the ribs from the barbeque and rest for 30mins.
  9. Remove the ribs from the foil and place on a rack back on the indirect side of the barbecue. Glaze with your favourite BBQ sauce Leave for 5mins with the lid closed allowing the sauce to set.
  10. Cut and serve ribs on a platter with a Herbed Apple Slaw and your favourite sides.

Herbed Apple Slaw

  1. Julienne the apple and place it in a bowl of water with a good squeeze of lemon juice to prevent the apples browning.
  2. In a separate bowl whisk together the mayonnaise, buttermilk, vinegar, sugar, celery salt and garlic powder to make the dressing.
  3. Drain the apple from the water.
  4. Gently toss the cabbages, apple and herbs through the dressing just before serving.

  • 1 rack of St Louis cut pork ribs
  • Rub of your choice
  • 100g butter
  • 1 Tablespoon brown sugar
  • 1 Tablespoon honey

HERBED APPLE SLAW:

  • ½ head shredded white cabbage
  • ¼ head shredded red cabbage
  • 1 green apple
  • 2/3 cup mayonnaise
  • 5 Tablespoons buttermilk
  • 1 Tablespoon apple cider vinegar
  • 1 teaspoon brown sugar
  • ½ teaspoon celery salt
  • 1/8 teaspoon garlic powder
  • ¼ cup fresh herbs (parsley, chives, dill)
  • Salt and pepper to taste
  • Lemon juice
