Instructions
Remove hard fat and silver skin from the lamb shanks
Lightly coat shanks in olive oil
Mix salt, ground pepper, dried rosemary and garlic powder in equal parts and use to season the lamb shanks.
Set aside and light the Char-Griller Akorn. Bring to 300F.
Place shanks uncovered on the BBQ.
Next dice one medium onion and thinly slice or crush one garlic clove. Add to a pot or pan with 25g butter and sauté until clear.
Add 1 cup of lamb stock and 2 tablespoons of tomato paste. Do not simmer or boil, just heat enough to allow all ingredients to thoroughly mix.
Once shanks have coloured well and the rub is set (you cannot scrape the rub off with your fingernail), remove the shanks from the BBQ. Approximately 1 hour.
Place shanks in a small foil tray, pour in the lamb stock mix in the bottom of the tray and cover with foil.
Return to the BBQ for 30 minutes then turn the shanks so both sides have time in the liquid.
Once the shanks probe like butter (approximately an additional 30 – 40 minutes), remove from BBQ and set aside for 10 minutes to cool.
