Roast Beef and Vegetables

This roast beef recipe is perfect for a weekend feast!

Cook Time: 2 Hours & 20 minutes
Prep Time: 10 minutes

Instructions

  1. Chop potatoes, kumaras and onion into large chunks. Wash carrots and peel garlic gloves.
  2. Place vegetables in a foil tray, drizzle with olive oil then season with salt and set aside.
  3. Season beef roast with Char-Griller Brisket and Beef Rub
  4. Light Char-Griller Akorn and bring to 300F
  5. Place tray of vegetables into the barbecue and leave for 60 minutes.
  6. After 60 minutes use tongs to turn the vegetables to avoid sticking to the bottom of the tray.
  7. At the same time place the beef roast on the warming tray directly above the vegetables.
  8. Cook for a further 90 – 100 minutes or until the internal temperature of the beef reaches 135F (or 57C).
  9. Remove beef, place in a foil tray and cover with tin foil. Rest for 10 – 15 minutes.
  10. Remove vegetables and cover tray with tin foil to keep warm.
  11. After 10 – 15 minutes slice the beef roast.
  12. Serve with the barbecued vegetables and your favourite gravy.
