Chicken Nachos

We can't get enough nachos. Beef, steak, pork, chicken, we will eat them any way you give them to us. This super easy recipe from @milemarker66 is perfect for entertaining friends or if you are looking for an easy weekend snack or dinner.

Instructions

  1. Lightly coat the chicken thighs with Char-Griller Ribs and Pork Rub.
  2. Light the Char-Griller Akorn and bring up to 275 F
  3. Place the chicken thighs in the BBQ and cook for 20 minutes or until the rub has set.
  4. Remove thighs from the Akorn and place in a foil tray.
  5. Cover with 2 cans of chopped tomato’s, 1 cup of BBQ sauce and 1 can of chilli beans. Cover the tray in foil and return to the BBQ for 90 minutes or until the chicken is tender enough to pull.
  6. Remove the tray from the BBQ and using claws or forks shred/pull the chicken, mixing all the ingredients together.
  7. On a cast iron serving dish (or similar) place a base of corn chips and scoop the chicken nacho mix on top.
  8. Top with mozzarella and return to the BBQ for 5 minutes or until the cheese has melted.
  9. Remove from the BBQ and stand for 5 minutes to cool.
  10. Top with sour cream and serve.
