CHIPOTLE BUFFALO WINGS WITH WILD WINGS DIPPING SAUCE

INGREDIENTS CHERRY CHIPOTLE BUFFALO WINGS

  • 1.8 kg of chicken wings
  • 1 bottle Cherry Chipotle BBQ Sauce
  • Roasted Garlic Chipotle Rub, to taste

 

WILD WINGS DIPPING SAUCE

  • 2 cups light sour cream
  • 1 cup blue cheese salad dressing, we like Litehouse brand
  • 1 cup blue cheese, crumbled
  • 1 cup green onions, sliced
  • 1 teaspoon Roasted Garlic Chipotle Rub

MEAT PREPERATION
  1. Trim fat from chicken breast and cut chicken in half.
  2. Using a large glass tray pour chipotle marinade over chicken breast and marinade for 2 hours.

COOKING DIRECTIONS CHERRY CHIPOTLE BUFFALO WINGS

  1. In medium bowl, mix all ingredients. Refrigerate for at least two hours to blend flavours.

 

WILD WINGS DIPPING SAUCE

  1. Dust chicken wings with Roasted Garlic Chipotle Rub. Place chicken wings then onto the grill.
  2. Let chicken wings sit in the smoke for 30 minutes or so.
  3. Build up the fire and grill them at 180˚C for 30 minutes or so until the internal temp is 74˚C.
  4. The meat will start to flake at 87˚C.
  5. In the last 15 minutes brush on more Cheery Chipotle BBQ sauce, flip the chicken wings then sauce the other side. Every 5 minutes give another coating of sauce.
