INGREDIENTS |
- 1 5kg ham
- 1 cup brown sugar
- 1 cup brown mustard (or your favourite flavour mustard)

PREPARING GLAZE
|
- In small bowl mix brown sugar with mustard.
- Score the ham in diamond pattern. Generously brush on glaze.
- Place glazed ham in large baking dish or cast iron skillet and onto the grill.
- Scoring is cutting small slits in a piece of meat. This process is useful when marinating to allow the meat to absorb even more of the marinade flavour.

COOKING DIRECTIONS |
- Pre heat Char Griller grill at 162˚C for 5-10mins.
- Place the ham directly onto the grill and close the griller to allow for the smoke to infuse into the ham for about 2 hours.
- When the meat reaches an internal temp around 55-60˚C, open the griller, remove the ham from the griller and cover the ham using a heat protected cover.
- Let the ham rest for 10 minutes before serving.

SMOKING TIPS |
There is little to no smoke at temps more than 122˚, anything higher than 122˚C is cooking and there will be not be much smoke. You may want to add a portable smoker box to get a smoking boost. |
