CHIPOTLE ORANGE GLAZED BACON WRAPPED AND STUFFED PORK LOIN

INGREDIENTS
  • Pork Tenderloin (according to desired size)
  • Bacon (enough to cover size of pork loin)
  • Chipotle Orange glaze
  • Seasoning Blend of your choice

EQUIPMENT Butcher’s cord

COOKING METHOD
  1. Lay your tenderloins out and season them with your choice of seasoning blend.
  2. Cover with a layer of bacon and some of your Chipotle Orange Glaze.
  3. Tie Bacon and pork loin together with a butcher’s cord.
  4. Using butcher’s cord or string, weave around the bacon and wrap it around the tenderloins.
  5. Place pork loin directly on the grill for 2 hours at 107˚C.
  6. Brush a heavy coat of Chipotle Orange Glaze over the pork loin in the last half hour.
  7. Smoke these for two hours looking for an internal temp 63˚C.
  8. Keep in mind that the meat will continue cooking for another 10 degrees after you pull it off the grill.

COOKING TIPS For medium tenderness pull it out at 60˚C and overdone at 72˚C.
