FIERY SMOKED CHUCK ROAST

107˚C at 2 hours (Smoking) then increase to 149˚C for 2.5 hrs (Cook)

INGREDIENTS
  • 2.5kg Roast Beef
  • 1x 800ml bottle Chipotle Marinade
  • Chipotle chilli powder, to taste
  • 2 x cups Colby-Jack cheese, shredded
  • Your choice of dry seasoning

PREPARATIONS
  1. Place 2.5kg roast beef in an oven safe pan and marinade roast beef with chipotle marinade.
  2. Place in the fridge to marinade overnight. Any remaining marinade place onto the roast beef or in the pan.
  3. Take overnight marinated roast beef out of the fridge and season the roast with your choice of dry seasoning before you start cooking.

COOKING DIRECTIONS
  1. Pre heat your grill higher than your cooking temperature. After the grill has pre heated, reduce grill temperature to 107˚C
  2. Place marinated roast beef onto the grill and cover with foil at 107˚C and smoke for 2 hours.
  3. After roast beef has smoked for 2 hours, increase the heat to 149˚C and cook for another two and a half hours until the meat is tender and flaking apart.

COOKING TIPS  Most meats will not absorb any more smoke after 2 hours.
