CHAMPAGNE AND BASIL GRILLED SALMON

INGREDIENTS
  • 4 fresh salmon steaks or fillets
  • 1/4 cup fresh basil chopped
  • 2 tablespoons Dijon mustard
  • 2 tablespoons champagne vinegar
  • 1/3 cup extra virgin olive oil

COOKING METHOD
  1. Combine basil, Dijon mustard, champagne vinegar and olive oil to use as a baste for grilling.
  2. Spread marinade baste evenly over salmon.
  3. Place salmon skin side down on your grill, heated to medium-high heat and lightly oiled for 4-6 minutes depending on the thickness or until just cooked through.
  4. Baste frequently with the marinade.
  5. When salmon is cooked through, baste with remaining marinade on top of the salmon. Serve immediately.
