BUTTERFLIED CHICKEN

INGREDIENTS
  • 1 whole chicken (Approximately 2kg)
  • Dry rub/seasoning of choice
  • Rosemary wood pellets/chips

MEAT PREPARATION
  1. Lay the chicken out and remove the backbone with a sharp knife.
  2. Lay the chicken out flat and season it to taste.

COOKING METHOD
  1. Sprinkle wood pellets over the coals for taste of rosemary.
  2. Grill the chicken for about an hour at 177˚C.
  3. Take the grill to 82˚C as the meat will start to flake apart nicely. Keep in mind that the meat will continue cooking for another 10 minutes after you pull it off the grill.
