Mix minced garlic, salt, ground black pepper in a small mixing bowl to form as seasoning for beef patties.
Roll sirloin beef into 4 equal patties.
Season patties with mixed seasoning
After seasoning your meat, lay one patty flat in your hand and using your thumb form a hole in the middle of the patty. Fill the hole with some chopped bacon and cheese cubes and close with patty meat.
Using a second patty, make another small hole in the top of the patty and place bacon strip on the top of the patty. Using your hands apply pressure and roll both patties sealing them together to form one large patty with bacon in between the two patties.
Make a basket weave with your bacon and lay your stuffed patty on it and wrap bacon around the outside of the beef patty. Number of bacon strips used is personal preference.
Place the patties back into the refrigerator until you’re ready to grill.
Smoke stuffed beef patties for an hour over your choice of smoking chips.
Grill stuffed beef patties on the grill plate for 10 minutes per side with a quarter turn at the half way point. Char-Griller recommends an internal temperature of 74˚C.
